Chocolate Pretzel Cheesecake

I’ve was asked to make some cheesecakes as part of a fundraiser for a Relay for Life kick-off. I decided to go with a Boston Cream Cheesecake recipe for one of them and a Chocolate Pretzel Cheesecake for the other one.

 I have been getting more and more requests for cheesecakes as people see all the great types of cheesecake recipes available. Who knows, maybe I’ll have to get into the cheesecake making business!

Gift from a Friend

Yesterday I took a chocolate cheesecake to work to share with my co-workers. Everyone seemed to enjoy it and were anxious to check out the recipes on my web site.

Today I was pleasantly surprised when one of my friends brought a cheesecake recipe book to work for me. It was something her mother gave her years ago and she told me that she hoped I would take the hint and continue making cheesecakes to bring to work. I was quickly assured that everyone at work would be happy to help me out by sampling the results of  any  new recipes I wanted to try!

Celebrity Cheesecake Recipes

Celebrities are always a source of fascination and I thought it would a lot of fun to have something like this. I hope to hear from you!

Savory Cheesecakes…The Other Cheesecake

If you are like me (and most people) you probably have heard of but never had a savory cheesecake. Maybe you have never even heard of them.

Savory cheesecakes as opposed to regular cheesecakes are just that. Savory, not sweet. They are usually served warm or at room temperature and are good for use as an hors d’oeuvre, appetizer or as a light supper, possibly accompanied by a salad.

There are may delicious recipes that can be made and you might want to have a party just so you can try some of these great cheesecakes.

I have recently had two people submit baked cheesecake recipes to my web site that I can’t wait to try. The first one is for Cheesecake Divine and the other one is for Ricotta Cheesecake. They both sound wonderful. The person that submitted the Ricotta Cheesecake even makes her own cheeses!

The recipe as posted is delicious but it can surely be dressed up with nuts or chocolate to make it even more special for that next big dinner event.

Busy Week

I have a lot of things going on this week in addition to work. I have an appointment or meeting to go to almost every day when I leave work. On Thursday there is a baby shower for a co-worker and if I have time tomorrow night I’ll try to make a cheesecake dessert to take along.

I have some great new recipes to add to my web site and will try to get them posted as soon as possible. I’m not promising much this week but I’ll do what I can.

What did you and your sweetheart do for Valentine’s Day? We all know that this is the most romantic day of the year and what is more romantic than a delicious cheesecake served after that special dinner?

I know it’s a little too late for this year but if you would like an idea on how to make next year’s romantic day more special, why not bake a heart shaped cheesecake? Heart shaped pans are readily available for purchase if you don’t already own one.

One great cheesecake recipe suggestion for next year might be New York Style Cheesecake garnished with chocolate covered strawberries. Some other suggestions are Rich Chocolate Truffle Cheesecake, Raspberry Fudge Cheesecake, White Chocolate Raspberry Cheesecake and Raspberry Cinnamon Cheesecake to name a few.

My Pick For the Potluck Dinner

Tonight is the potluck dinner at church. I reviewed a lot of great recipes and finally decided to make the Peanut Butter Cup Cheesecake…decadent chunks of peanut butter cups baked into a rich cheesecake batter. I plan to garnish it with more peanut butter cups and whipped topping. I’ll update you later on how it went over.

Chocolate Caramel Cheesecake

Crust:

3 tablespoons melted butter

1 and 1/4 cups crushed graham crackers

1 tablespoon granulated sugar

 

Preheat oven to 350 degrees. Combine the melted butter, graham cracker crumbs and 1 tablespoon sugar then press into the bottom of a 9 inch springform pan. Bake in preheated oven for 10 minutes and set aside to cool.

Filling:

3 (8 ounce) packages cream cheese, softened 

3 eggs at room temperature 

3/4 cup granulated sugar

2 teaspoons vanilla extract

2 (2.16 ounce) Snickers bars, chopped

 

 With an electric mixer, beat the cream cheese until smooth and creamy. Blend in 3/4 cup sugar and vanilla until well mixed. Add the eggs, one at a time and blend well after each addition. Stir in chopped candy bar, and pour into baked crust.

Bake at 350 degrees for 45 minutes or until almost set. Remove from the oven and loosen the cake from the edges of the pan with a sharp knife. Cool to room temperature then refrigerate for at least 3 hours before removing the rim and serving.

Serves 14.
