I have recently had two people submit baked cheesecake recipes to my web site that I can’t wait to try. The first one is for Cheesecake Divine and the other one is for Ricotta Cheesecake. They both sound wonderful. The person that submitted the Ricotta Cheesecake even makes her own cheeses!

I have a lot of things going on this week in addition to work. I have an appointment or meeting to go to almost every day when I leave work. On Thursday there is a baby shower for a co-worker and if I have time tomorrow night I’ll try to make a cheesecake dessert to take along.
I have some great new recipes to add to my web site and will try to get them posted as soon as possible. I’m not promising much this week but I’ll do what I can.

I garnished the cheesecake that I took to the dinner last night with chopped peanut butter cups and decorated the cake border with whipped topping. It tasted just as good as it looked. Everyone seemed to enjoy it and I got a lot of compliments. I guess I will have to take different cheesecake every time we have a dinner because I heard from a lot of people that cheesecake is one of their favorite desserts.

Tonight is the potluck dinner at church. I reviewed a lot of great recipes and finally decided to make the Peanut Butter Cup Cheesecake…decadent chunks of peanut butter cups baked into a rich cheesecake batter. I plan to garnish it with more peanut butter cups and whipped topping. I’ll update you later on how it went over.
Chocolate Caramel Cheesecake

Crust:
3 tablespoons melted butter
1 and 1/4 cups crushed graham crackers
1 tablespoon granulated sugar
Preheat oven to 350 degrees. Combine the melted butter, graham cracker crumbs and 1 tablespoon sugar then press into the bottom of a 9 inch springform pan. Bake in preheated oven for 10 minutes and set aside to cool.
Filling:
3 (8 ounce) packages cream cheese, softened
3 eggs at room temperature
3/4 cup granulated sugar
2 teaspoons vanilla extract
2 (2.16 ounce) Snickers bars, chopped
With an electric mixer, beat the cream cheese until smooth and creamy. Blend in 3/4 cup sugar and vanilla until well mixed. Add the eggs, one at a time and blend well after each addition. Stir in chopped candy bar, and pour into baked crust.
Bake at 350 degrees for 45 minutes or until almost set. Remove from the oven and loosen the cake from the edges of the pan with a sharp knife. Cool to room temperature then refrigerate for at least 3 hours before removing the rim and serving.
Serves 14.

An Easy Cheesecake Recipe To Start With If You Have Never Made One Before

Crust:
1 and 1/2 cups crushed shortbread cookies
1/3 cup melted butter
1/4 cup sugar
1 packet of unflavored gelatin powder
Preheat oven to 350 degrees. Combine the above ingredients and press into the bottom of a 9 inch spring form pan. Bake at 350 degrees for 8 minutes then set aside to cool.
Filling:
2 (8 ounce) packages of cream cheese, softened
8 ounces of sour cream at room temperature
1 cup granulated sugar
2 eggs at room temperature
2 tablespoons of real butter at room temperature
2 tablespoons of cornstarch
1 teaspoon vanilla
With and electric mixer on medium speed, beat the cream cheese until smooth. Blend in the sour cream, 1 cup sugar, butter, cornstarch, and vanilla until smooth. Add the eggs one at a time and blend well after each one. Pour this mixture into prepared crust.
Bake at 350 degrees for about 30 minutes or until almost set. Remove from the oven and loosen the cake from the edges of the pan with a sharp knife but don’t remove the rim. Cool to room temperature then refrigerate for at least 3 hours before removing the rim and serving.
Serves 12.

I know it has been a couple of days. There has been a lot going on and not a lot of time to deal with cheesecakes. Sadly, a well known and well loved member of our community died recently and his funeral was today. It has been hard dealing with the impact of the loss to everyone in town.
We were supposed to have a couple inches of snow overnight but that turned out to be little to no accumulation to speak of. Of course we are in the middle of the winter season so unforunately bad weather is a part of life.
There are always more and more cheesecake recipes to look at and adapt for my web site. My husband and I went out to dinner tonight and guess what I had for dessert? You guessed it…cheesecake! I guess it is time to get back to working on my web site and back to the world of cheesecakes.

We have had the past two days off because of weather..snow and ice. I am putting my time off to good use by working on my web site, in addition to shoveling the driveway.
I never realized how time consuming the topic of cheesecakes could be. It almost feels like my whole life revolves around cheesecake recipes now. Actually, the only thing about cheesecakes that I haven’t been giving time to is actually baking or making them.
I want to get some great pictures of some of my creations so I have to start devoting some time to that. I don’t think I would have too many complaints if I would bring a cheesecake or two to work!
